POINTS® Value: 4.5
Servings: 4
Preparation Time: 15 min
Cooking Time: 35 min
Level of Difficulty: Easy

Ingredients:
1 spray low-fat cooking spray
1 medium onion(s)
1 clove garlic
100 g mushrooms
400 g Italian Style Mixed Beans
1 large can canned tomatoes
1 teaspoon chilli powder
225 g roast turkey
2 tablespoon fresh coriander
1 pinch salt
1 serving pepper
4 medium soft tortilla(s)
25 g half-fat cheddar cheese

Instructions:
Heat a large frying pan and mist it with low fat cooking spray. Add the onion, garlic and mushrooms and sauté them until softened, about 5 minutes.

Add the mixed beans, tomatoes and chilli powder to the frying pan. Cook for about 10 more minutes, stirring often, until the liquid has reduced down. Stir in the turkey and coriander. Season.

Lay the tortillas onto four heat resistant plates and divide the filling equally between them. Scatter the grated cheese on top and grill for 3-4 minutes until the cheese has melted.

Cook's Tip: A home made salsa makes the perfect accompaniment and has no POINTS value. Just mix together finely chopped red onion, cucumber, tomatoes, coriander or parsley and flavour with lime juice, Tabasco sauce, salt and pepper.
